As others have said gradually build up your tolerance by increasing the time you sit crossed legged...what i will suggest is don't force your self, if your legs begin to ache really badly, move your position and let the blood flow....the last thing you want is to batter your knees at a young age and end up with arthritis...

its all about circulation...make sure you eat a healthy diet with lots of fruit/veg & water...make sure you do some form of excercise regularly...do lots of stretching esp of the legs, i suppose yoga would help hear

Finally to keep your knee joints lubricated as sitting cross legged can take its toll on people who haven't conditioned there knees yet...to add Essential Fatty Acids (EFA's) to your diet...for vege's this will probably be flaxseed oil

Personally, if you're really in so much pain, I find nothing wrong with taking a break and getting up and then coming back to wherever you were sitting (in Gurdwara). The break could be five minutes or however long you need to feel comfortable again.

There's no point in toughing it out if you can't enjoy anything.

Trust me, when I used to play tabla in sangat, and I was feeling tired, I would let it be known in a professional manner. ;) If your stamina is diminishing, shouldn't you give the seva to someone else?
