personally , at a guess i think it may have sumfin to do wiv da ni-aara-pan (uniqueness) of khalsa panth. green and red are main or prefered colors of muslims and hindus. so as not to confuse any outsiders to the seperateness of the sikh people.

I was thinking in similar line too. During those times especially during wartime, khalsa uniform needed to stand apart/different from those around.

page 2 note 9 & 10 explains how the poem was discovered. No mention of authencity though.
