Sangat Ji I was reading the STTM translation of JapJi Sahib to help me understand it, and when I got to this line, I read Akaashic ethers and came up with a blank. I googled it, and couldn't find it and am wondering if someone can explain them to me?

those translations are not right.

that line means that by listening to gurbani, the darti, the taval, and akaash were formed. all those suniyai lines are that those things were either formed by listening to gurbani, or if it talks about a person's shub gunn's, then those are obtained by listening to gurbani.

The translation used in the original post in an inaccurate one in many, many places. In the instance presented, aakaas means the skies. There are many inaccuracies in that translation of the Guru. It is better to use a translation into Hindi or Punjabi. Even simple words are mistranslated in that translation. For example, "bhai" is translated as "Siblings of Destiny", which is not even close. The Hindi and Punjabi translations are much better. It is okay to read that translation, but it should be strictly for entertainment, not used as a religion.
