That's not a topi  it's just the style of dastar that many sikhs wore during the sikh raj when most of these paintings were done

A lot of the time the guru granth sahibbjis were written a lot before the Sikh raj period but the art work was added during the Sikh raj.

See, fashion and attire changes    he looks good for that time period, looks like a warrior and fits in,  but if someone dressed like that today haha!

some people are doing parchar that old dasam granth saroops contain paintings of Guru Sahib with topi, so dasam granth is fake.

how to counter this wrong parchar?

Why you so bothered? I don't understand why you are more bothered about how the Gurus look rather than what they teach.

That is a drawing that an artist created from his mind of someone in a certain form of dress who (in his mind) represents Guru ji.

That doesn't mean that's Guru ji. It just means that's the artist's representation, nothing more.

the dumalla was much smaller in times of Guru Gobind Singh, it may be mistaken for a hat in these days!

Simple: There are Guru Granth Sahib ji sarups, too, which feature purported paintings of Guru ji. Does that mean that Guru Granth Sahib ji is fake, too?

The bani is real (Aad or Dasam), the paintings are artists' conceptions.
