Why is it always someone remembering being World War pilot or some other glamorous career?

Why don't we hear stories about being an accountant, cleaner, farmer, carpenter?

It's more interesting/less mundane. More likely to be 'ingrained' on the soul

Delusional wrong word here. If it was untrue, then you could say that. 

I agree we should not think about past lives too much, but it might help some people understand their current life better

Current life better? Your current life is now. Hence the present according to Guru Ji. But yes do understand you somewhat.

Surviving death on Netflix was good. Some of the episodes were weird, like communicating with dead relatives! But the reincarnation episode was really good.
