1984 India's Guilty Secret The best book about the Sikh Genocide

A History of the Sikhs by Kushwant Singh I know he has some controversial views about Bhindranwale but his book is amazing and provides primary sources for everything

Sikh History from Persian Sources is amazing and show a different view on Sikh History

Warrior Saints is an amazing book which is definitely a must read

Need to read some more myself. I've pieced it all together so far through Ithias, Katha, and posts. 

My first primer was Pearls of Sikhism, which is more of an outreach book printed here than a history book.

That Jagjit Singh one I posted on the forum (and keep plugging) is definitely one of THE best in my opinion - The Sikh Revolution.

Others have been previously mentioned, like:

Sikh History from Persian Sources by Habib and Grewal 

Warrior Saints and Sicques, Tigers and Thieves by Madra and SIngh are great. Especially the latter, which contains most of the early European sources.

Khushwant Singh's one is a good starting point, but we've had so much research since then, parts of it would be inadequate or out of date now.
