i was just wondering why sikhs arent allowed to eat anything before morning nitnem, i just know that we are allowed to drink water, das it.

Same reason y I never eat anything before doin 2hrs of JapJi Sahib during an Akhand Paath

On a purely practical level, it's better not to eat otherwise during the hour or so that it'll take you to do your nitnem, you could get....distracted - once ur digestive system starts processing your breakfast.

it is the same reason as why you take a shower before you start your day

without nitnem we have not done our daily ishnaan in amrit sarovar

it is also the same reason why people do an ardas at the gurdwara before starting a new venture

because nitnem is like your ardas to thank guru sahib, ask for forgiveness, pray for blessing, before you start your new day

eating without nitnem is like . . . getting parshad (degh) at the gurdwara without matha - tek

if you wouldn't do that, you wouldn't forget nitnem before eating / starting your day
