Sorry for the late reply. Even so I hope you make and like them:

Ingredients:

250g self-raising flour

Half a teaspoon bicarbonate of soda

Half a teaspoon of salt

4 tablespoons (60ml) of unsweetened cocoa powder

140g white sugar

Equivalent of 1 egg (I use egg replacement powder from Tesco's, some people use their own recipes)

240ml milk

90ml corn oil

1 teaspoon vanilla essence

70g plain chocolate drops (if you want chocolate chips in em)

Preheat your oven to 190-200 degrees Celsius.

In a bowl sift together the flour, bicarbonate of soda, salt and cocoa. Stir in the sugar. Add the chocolate drops and mix.

In a separate bowl, add your egg replacement, milk, oil and vanilla and mix.

Pour the wet bowl into the dry bowl and stir until the mixture is JUST combined. *don't stir too much* The mixture should be lumpy and a bit stiff, but no dry flour should be visible.

Fill a muffin tray (or paper cases) spooning the mixture until cases/holes are three-quarters full.

Bake for 15-20 minutes until the tops spring back when touched. Make sure they're cooked when a toothpick/fork poked in the middle comes out clean.

Usually this mixture makes at least 20 little muffins, so half everything if you want to test it first. It's been tried and tested, and forced down the throats of non-veg people who can't tell they're eggless (or pretend they can't anyway).

Good luck
