I think it might be because the concluding lines of a Paath, whether it be Japji Sahib or Akhand Paath, always contain concluding statements by Guru Jee, so that when the Paath is read out, we pay attention to the conclusions being read out of the Bani. But don't know for sure.

mrsinghsahib has a valid point. Something about the last stanzas of the various Nitnem Banis have a quality that make the reader want to pay even greater attention to them. So the inclination of the Patthis Sikhs (what, no Patthi Kaurs?) to slow down at the end. It is like any literary composition...the last paragraph is the conclusion statement that sums up the entire composition above and demands special attention to it.
