Respect. Its the difference between seeing our Guru as a book, and a living being.

When we take Guru Granth Sahib as our living Guru, we give it the respect of a living person, with chor sahib used as a sign of nobility and for cooling.

With the parshad, it is given as a blessing from the guru. Originally, langar was never "blessed" by bhog like it is now, so kara parshad was used as the blessed food to give to the sangat.

To waive the Chaar is to cool or fan and clean the air/dust around the Guru,make sure no flies are on the Guru, and respect.

Back in the days of monarchs the King had a servant to waive the Chaar over them to do what I described above, and to us the Guru is the King or Kings so we treat Guru with the respect as the Maharaj deserves to get.

This notion off keeping the flies off etc I find quite offensive and shows lack of knowledge.

There are signs that depict someone as royal, these are royal signs and one of these is the Chaur Sahib, this procalims to all that our Guru is the highest of the high, He is the king of kings, shah of shahs, hence we give the utmost respect by doing chaur Sahib. Another sign is the Chanani, that is draped above Guru Sahib Ji. Again in olden days this was done for all kings. There are a couple of other signs also.

So, the reason we do chaur is because Guru Granth Sahib ji is our Guru, our shehan shah, sutcha patshah and we are his subjects.
