Errrm, the heat from that oven is enough to make a human taste like tandoori chicken so i doubt if any bacteria survive that. Langar tends to be more hygenic than the most of the food you get from outside.

Also, if you start worrying about hygene then you wont take a dip at harmandir sahib or take a chula or sprinkle charan amrit in your eyes and hair etc.
